Description

Chianti DOCG Idèo Red Wine: History, Origin and Aging

Idèo is a Chianti DOCG Red Wine which comes from the hills of Win, near Florence, in the cellar of Fattoria Dianella 1. It is the typical red of the Tuscan territory in its most prestigious version, the fruit of the commitment and dedication of the company. In this land kissed by the sun and caressed by night breezes, the grapes ripen in an ideal microclimate that gives the wine a velvety softness, fruity aromas and an authentic personality.

Idèo is obtained from a blend of grapes Sangiovese, predominantly, and Merlot, harvested manually. The bunches, once destemmed and pressed, are fermented separately, in stainless steel containers at a controlled temperature, with maceration on the skins for about 15 days. After alcoholic fermentation, malolactic fermentation takes place in cement tanks. The wine ages for ten months: seven in stainless steel, three in French oak barriques and two in the bottle.

Idèo is produced on the hills of Win, a municipality in the province of Florence, famous for being the birthplace of Leonardo da Vinci. The microclimate of this area, characterized by temperature variations between day and night, favors the optimal ripening of the grapes, giving Idèo a balanced structure and a complex aromatic profile.

Sensory Notes of Idèo

At first sight, Idèo presents itself with a colour lively ruby red. On the nose, it releases a rich bouquet of ripe red fruits, such as morello cherry and plum, with notes of Mediterranean herbs and delicate spicy nuances of vanilla and cinnamon. On the palate, it has a rounded and harmonious taste, with a well-balanced acidity and a defined tannin. Its persistent freshness and fruity aftertaste make it ideal to accompany autumn dishes and roast meats.

Pairings Idèo – Red Wine Chianti DOCG

Idèo is perfect to combine with first courses with meat sauce, lasagna with ragù, grilled meats And red meat roasts. It is also excellent with typical Tuscan dishes, such as reboiled, crostini with chicken liver paté And Florentine steak.
